It was a wild and not to mention dangerous part of my life. I played some scary clubs with some scary people. What is food?
New American Food is a new approach to classic American favorites. I really feel food comes from the soul. Everything we do revolves around food "What are we going to eat tonight?" "What do you want for lunch?" "Whats for breakfast?". What is food? Why does it make us so happy and fill certain voids?

What is the meaning of food...
Food is nothing and it is everything. It fuels our daily existence it feeds our minds and comforts our hearts it’s a complex language that speaks of connection, continuity, memory and love. It is what binds us together as families as communities and as human beings.
So what is the meaning of food? It is a part of everything we do. As boundless and complex as humanity itself. An old saying goes; the stomach is the center and origin of all civilization. How true!
I really love to take old American classics and make them my own... taking other countries inspirations and intertwining them with American classics. Isn't that what America is all about? all sorts of people living together in an area? that's called neighborhoods, places where people from all different countries living together separated only buy sheet-rock. what goes on in that neighborhood? What are they cooking? What are they watching on TV? Years ago, you knew the people in your neighborhood, you played with there kids, you played in there yards, you ate over there house for dinner. You traded school lunches and got to eat there mom's food creations. Even back then food was our center. I remember working in restaurants back in my training days and we would trade dinner with other restaurants in the area. Sushi chefs eating Italian... Italian chefs eating Chinese, Chinese eating Indian... we get bored with the same thing every night! I sugest trying something new. Take an American classic dish and add some culture from another country, learn to create on the plate. I am coming out with The Bistro's new menu on April 9th 2010 and at our last staff meeting, i asked all my staff to come up with there own dish, there own creation. I told them i would put it on the menu and call it "staff inspired dishes". I created some new dishes i feel will be a huge success, we recently tested our "Fried Mac and 4 Cheese Spring Roll" drizzled with a warm Rosemary Honey. We are doing a new approach to a Southern favorite "Chicken and Waffles". We are doing a "Parise Roll", my take on sushi, i take Parma Prosciutto, Roasted Garlic risotto stuffed with roasted Red Peppers,Sun dried Tomatoes, Goat Cheese and fillet Mignon, rolled and cut, drizzled with a sweet Balsamic Molasses. I am looking forward to this new menu launch and i hope you come by the bistro and try some new cutting edge cuisine. Its kind of like coming to my neighborhood. What does the future hold?
I am here at the bistro sitting in my office thinking about all i have done. I always knew since the age of 5 that i wanted to become a comedian...i lived that dream. It seems that food and entertainment work well with me. Going from the opening act of the most controversial comedian of our time, Andrew Dice Clay to creating the most politically incorrect and successful catering companies in Los Angeles to the opening of my first signature bistro as a celebrity chef in the mountains of North Carolina. Life on stage, life on the road and life in the kitchen . How a kid from Long Island who moves to a small town in Citrus County FL who always believed in himself, followed his dream and made it happen...his way. Life in LA as comedian the early years: being broke as hell living in a fleabag hotel hanging out at the Comedy Store on Sunset Blvd. The dark side of trying to make it as a comic. Life in LA, the great years: Opening for the hottest comic in the country, landing an agent, ties to the mob, getting television and movie rolls, becoming a name comic, still hanging at the store but with money in my pocket. Hanging out with celebrities, my life in West Hollywood and hanging at the Rainbow Bar and Grill. The opening act: Touring the country with Andrew Dice Clay, private planes, the best hotels,groupies,backstage and behind the scenes look at what really goes on the road. At 38 years old i thought my life was going to be pretty much where it was. Working in a few restaurants doing some shows here and there and pretty much still hanging at the store single no children, pretty much the same as 90 percent of your washed up comedians out there that never let go of the past,until...I was hanging out at Mitzi Shores house, Pauly's mom. I was talking to her nurse and asked her "Do you have a friend you can introduce me to"? she said yes, she is a nurse too! I said great, hook it up! next thing you know my whole life had changed in a matter of months. I went from this misguided washed up comic to the happiest man in the world. I was married to an incredible woman and we had a child on the way that would change my life for good and i was ready for it.The dad, the husband, the Cannoli King!: How i started a catering company out of a one bedroom apt. to becoming the #1 catering company in Los Angeles. Back in showbiz opening for Dice again and starring in a VH1 reality show, becoming a celebrity chef, making new friends catering for big celebrities and behind the scenes of the food world, to finally opening my first signature restaurant as a celebrity chef.
I have so much to say and write about that it would take pages and pages, that is why i am writing a book called "From opening act to opening night" my life as a comedian/chef. It promises to be a roller coaster of emotions. A wild ride of a boy who followed his dream and took it to the next level. I am not done with my journey or dreams and i am having a great time with my family creating new dreams for us! So... What does the future hold?
